Creating a Contact Record
Click the Contact icon
Click File / New / Contact
Or, Click the Contact icon on the toolbar 
Contact Icon Method
The following dialog box displays

In the Full Name box, type the name of the person: Edward Martins
File as: Select the option you want
Enter all the other information you want to include
You will find many options from the black diamond drop-down menus
Enter the e-mail address: emartins@aol.com
Click Save and Close
Drag and Drop Method
The easiest way is to create a Contact record directly from the e-mail
Click Inbox
Highlight the person's e-mail address
Using the left mouse button, press and drag it to the Contacts button on the Outlook Bar
Release the mouse button
The Contact record displays
Enter as much information as you want
Notice: the e-mail address is automatically inserted
Click Save and Close
